- Make ready 4 medium sized potatoes
- Take 2 large leeks
- Make ready 1 medium onion finely chopped
- Make ready 1 litre vegetable stock
- Prepare 250 ml milk
- Get Salt and pepper
Instructions to make Leek and potato soup:
- Finely chop the onion, peel and chop the potatoes, slice and wash the leeks (to remove any dirt)
- Heat 1 tbsp oil in a large pan with a lid and fry off the onion over a medium heat until soft. Then add the leeks and fry for another couple of minutes. Then add the chopped potatoes
- Meanwhile make the stock and measure out the milk and add them to the pot
- Season with salt and plenty of pepper. Bring the pot to the boil and then reduce the heat and simmer until the potatoes are soft (approx 20-30 mins)
- Once cooked, leave to cool and then blitz with a stick blender until smooth. You could serve with cream or creme fraiche.
