The ingredients needed to make Kimchi Soup:
  1. neutral oil
  2. gloves garlic chopped
  3. ginger chopped
  4. gochujang
  5. kimchi chopped
  6. chicken stock
  7. fish sauce
  8. tofu (soft or firm) diced into 1 in cubes
  9. 2 eggs
  10. scallions chopped into 1 in pieces
  11. Chinese cooking wine
  12. sesame oil

Steps to make Kimchi Soup:
  1. Heat oil in Dutch oven or large pot
  2. Add garlic and ginger and sauté for 2 min. Add gochujang and sauté for 1 min
  3. Add kimchi and sauté for 30 seconds
  4. Add chicken stock and fish stock and bring to a boil
  5. Once boiling, lower heat to simmer and add tofu. Simmer for 5-10 min.
  6. Crack eggs directly into soup and stir quickly. Eggs should become stringy (like egg drop soup)
  7. Add scallions, cooking wine and sesame oil. Simmer for 2 min
  8. Enjoy with a side of rice or rice noodles!
