The ingredients needed to make Daal Makhni:
  1. 3/4 cup urad daal
  2. 1/4 cup rajma
  3. 3 cups water for pressure cooking
  4. 1 onion finally chopped
  5. 1 green chilli
  6. 2 tsp ginger garlic paste
  7. 2 large tomato puree
  8. 1/2 tsp Jeera
  9. 2 cloves
  10. 2-3 green cardamoms
  11. 1 black cardamom
  12. 1 inch Cinnamon stick
  13. 1 Bay leaf
  14. 1/2 spoon red chilli powder (kashmiri laal mirch)
  15. 1 cup water as required
  16. 1/2 spoon low fat cream or you can use 1 spoon malai
  17. 1/4 teaspoon kasturi methi
  18. 3 tsp butter
  19. Salt as per required
Steps to make Daal Makhni:
  1. Soak urad or rajma overnight in enough water.
  2. Drain water and add them into pressure cooker add 3 4 cup water stir well.
  3. Pressure cook for 18 19 whistle on high flame keep the cooked beans aside.
  4. In a mixer jar take chopped tomato green chilli.
  5. Blend to smooth puree.
  6. Now in a pan 3 tsp butter.
  7. Add all the spices cumin seeds, tej patta, green cardamom, black cardmom, cinnamon,
  8. Saute all the spices.
  9. Add chpped onion saute onion toll brown.
  10. Add ginger garlic paste.
  11. Now add tomato or green chilli paste saute again.
  12. Put red chilli powder.
  13. Stir well and saute this mixture on low flame till the oil seprate from mixture or top of the mixture.
  14. Then add cookde rajma urad daal also add 1 cup water.
  15. Stirr untill both began thik add salt as required.
  16. Continue to simmer into low flame the longer you keep daal makhni, the better it taste.
  17. When garvy thick enough put cream or malai into it, daal makhni is not too thick or thin.
  18. Stir cream very well.
  19. Now add kasturi methi crushed. Stir again. Keep daal makhni aside.
  20. Now serve it with roti or naan.
