  1. Blanch the tomatoes for just about 2-5min,peel off the skin,deseed the tomatoes and finely chop the tomatoes (some use tomatoes puree I have used chopped tomatoes).peel the garlic cloves and finely chop these as well.

Add oil in a pan,then add garlic and saute make sure not to burn the garlic,add chopped tomatoes and saute it well for sometime then add chilli flakes (I dint have chilli flakes so I used crushed dry redchillies) salt to taste and little sugar only if the tomatoes are tangy,stir it well until cooked.
  3. On the other side boil the macaroni with some salt,strain it once it's boiled well.
  4. Imdtly add the boiled macaroni to the tomato mixture and stir it for sometime until the macaroni gets well coated and soft,then grate some good amount of cheese over it.
  5. Finally garnish it with cilantro/coriander/ parsley.
