- Prepare 2 cups leftover Mash potatoes
- Make ready Salt to taste
- Get Ground black pepper to taste
- Get 1 small spring onion, finely sliced
- Prepare 1/4 cup + plus a few tbsp (if needed) of plain flour
- Make ready 1-2 tbsp milk, if needed
- Get Butter for frying
Instructions to make Potato Cakes:
- Use a fork to break up the cold mash then place it in a bowl.
- Mix the mash with the flour, spring onions, salt and pepper. If the dough is too wet and sticky add extra flour and if its too dry add a tablespoon of milk. Mix it all together really well.
- Form the dough into balls slightly smaller than a golf ball. With your hand or back of a spoon flatten each ball.
- Over medium heat, heat a pan and add a knob of butter.
- Once melted add the potato cakes. Leave plenty of space to turn the cakes. Fry on each side for 2-3 minutes.
- May need to be cooked in batches, if so then wipe the pan down with kitchen paper and melt new butter and repeat.
