  4. Heat high smoke point oil (peanut, canola, veggie etc.) to 350f/175c and maintain. If no thermometer, test with woodden spoon - looking for medium amount of bubbling (let cool a bit if bubbles too much)
  5. Dust fish with flour, dip into batter to fully coat, let excess drip for 5s then lay away into oil
  6. Fry for 4-8min depending on thickness, drain on rack/rolled tin foil/paper towel, generously sprinkle on salt
