- For ALOO MIXTURE:
- 2 tsp Oil
- 1/2 tsp mustard seeds
- pinch hing
- A few curry leaves
- 2 cloves garlic, crushed
- 1 chilli, finely chopped
- 2 tbsp coriander, finely chopped
- 1/2 tsp turmeric powder
- 2 potatoes,boiled & mashed
- 1 tsp salt or as needed
- 1 tbsp lemon juice
- As required Garlic chutney
- As needed Green chutney
Further to cover them, we have made a thick Succulent and spicy potato vadas are sandwiched between fresh pav bread along with dry garlic. Vada Pav is the humble street food of Mumbai, that every person can afford and find easily. These can also be called Spicy Potato Sliders. Vada Pav is also known as Batata Vada, where Batata is potato in Marathi and Pav is bread, similar to dinner rolls.
Steps to make Sunflower shaped vada paav Bread:
- For aloo filling Take a pan and heat 2 tsp oil and splutter mustard seeds - Add a pinch of hing and few curry leaves. - Also add garlic, chilli, coriander and saute well. - Mow add turmeric powder and stir - add boiled and mashed potato and salt too. - Mix well making sure all the spices are combined well with potato. - - Turn off the flame and let the mix cool
- For the dough. - - Take yeast and sugar in a bowl, add little warm water and mix well. - Set aside for 5-7 mins for the yeast to activate.
- Now take Flour, salt, 2 tblspn of oil in a large bowl and mix well. Add in the yeast mix in and mix well using a fork. Add little warm water as needed.
- Knead this to a soft dough. The dough has to be nonsticky. - Drizzle in 1 tblspn of oil and knead well. - Cover and set aside to rise for 1 hour.
- When the dough gets double in size give some more bunches
- Now divide the dough in three equal parts. And again divide them in two parts each.
- Make balls and roll them like chapati. I made 9” chapati from each, so got six chapatis
- Take on chapati on a baking paper apply some garlic chutney. Place little filling in the center.
- Now keep filling around the circumference giving a round shape as shown
- Cover it with the other rolled chapati and place a small bowl in the middle. See pic
- With the help of a sharp knife give cuts as shown keeping the center intact
- Now lift and twist each cut. This will look like a sunflower. Sprinkle some dry garli- coconut chutney masala. Put some sesame seeds and kalongi in the middle.
- Place the tray in pre heated oven for 20 minutes or till it’s done
- Enjoy hot vada paav stuffed sunflower bread with your dad
