To begin with this particular recipe, we must first prepare a few components. You can have kolompeh (date cookie) using 9 ingredients and 7 steps. Here is how you cook that.

  1. 350 – 400 gr flour
  2. 125 gr butter (or solid oil)
  3. 1/2 cup water
  4. 1/2 cup yogurt (sweet and strained)
  5. 1 tablespoon rosewater (or saffron solved in water)
  6. For stuffing:
  7. 1 cup date (without the seeds)
  8. Ground walnut, cardamom powder, ginger powder, rosewater
  9. Little bit of oil to knead the date
  1. Mix the butter with yogurt, water and rosewater and add the flour gradually to your mixture to make your dough. Knead the dough little bit with your fingers to get solid and don’t stick to your hand.
  2. Note: make sure you don’t knead the dough a lot because it gets oily.
  3. Put the dough in the freezer bag and rest it in the refrigerator for half an hour. During this time, core the dates and knead them until they soften, then add the rest of the stuffing ingredients to it and make balls the size of a walnut.
  4. Take the dough out of the refrigerator and make balls bigger than the date balls from the dough. Then flatten the dough balls in our hands and put a date ball in the middle of each.
  5. Cover the dates completely with the dough so that there are no seams and cracks in the dough, then spread it with a little hand pressure, wrap its edges and put it in the oven tray.
  6. No need for baking paper and greasing the tray. Just sprinkle a little bit flour on the tray. Then bake the cookies for around 30 minutes in the oven (180 C) until they get little bit gold from down. Bon Apetit!
