The ingredients needed to make Mushroom Quinoa:
  1. 1 cup quinoa
  2. 1 tsp chicken stock granules
  3. 1 tbsp olive oil or cooking spray
  4. 5 clove minced garlic
  5. 12 oz cremini mushrooms, sliced
  6. 1 tbsp dry sherry
  7. 1/2 tsp thyme
  8. salt & pepper
  9. 1 (can garnish with minced parsley, if desired)
  10. 1 (can top with parmesan, when serving, if desired)
Instructions to make Mushroom Quinoa:
  1. Cook quinoa in 2 cups of water with chicken stock granules, following package directions.
  2. Heat olive oil or cooking spray in skillet or wok over medium high heat. Add minced garlic and cook a few minutes.
  3. Add mushrooms and stir to coat in oil. Add dry sherry and cover pan immediately, for 2 minutes.
  4. Add thyme, salt & pepper, to taste, and cook about 2 more minutes, stirring seasongs in.
  5. Add cooked quinoa to mushrooms and stir until well combined.
  6. Can top with parmesan or add protein of choice to make it a meal! I usually add cooked shrimp and garnish with parsley. Can also add any cooked veggies you might like. Enjoy!
