  4. Whisk thoroughly and add 30g butter. Whisk until all has melted.
  5. Microwave for 10 seconds. It might look as if it is curdling, but just whisk vigorously.
  6. Add rest of butter and the garlic. Whisk until all butter has melted. Microwave for 10 seconds.
  7. Whisk thorougly and microwave another 10 seconds.
  8. Whisk well, adjust seasoning and strain through a sieve.
  9. Serving suggestion: Drizzled over sautéed asparagus or in Eggs Benedict. Add fennel sprigs for a taste twist.
