Instructions to make Tex Mex Mac N Cheese with Meatballs:
- Mix the mince beef with salt and pepper to taste, 1 tsp paprika and 1 tsp cumin, then roll into small balls
- Sauté the diced onion and garlic with some salt until translucent, add the diced peppers and soften
- Add the remaining spices and herbs and cook through for 2 minutes until fragrant
- Add tinned tomatoes and then refill the tin with water and add that too
- Add both oxo cubes and stir until dissolved
- Add the black beans and cook for 5 mins
- Add the dried pasta and stir often until 50% cooked
- Then add the cottage cheese and Philadelphia and stir through until combined
- Simmer and reduce for 5 minutes stirring often
- Meanwhile brown the meatballs
- Place the meatballs on top of the pasta and sauce, and grate over the cathedral city cheese
- Pop under the grill until melted and bubbly
- Sprinkle over chopped spring onions and serve
