- For croissants crust-
- 250 gms maida
- 2 tsp yeast
- 1.5 cups melted butter

- For Jodhpuri stuffing-
- 4 medium sized onions finely chopped
- 2 green chillies finely chopped
- 3 boiled potatoes mashed
- 1 teaspoon saunf
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1/4 teaspoon asafoetida
- 3 teaspoons sugar
- 1.5 teaspoon red chilli powder
- 1/2 teaspoon turmeric
- 1/2 Juice of lemon
- 1/2 teaspoon chat masala
- 1 tbsp green coriander finely chopped
- 2 tbsp chickpeas flour
- 3 tbsp milk for milk wash
Instructions to make Jodhpuri coroissants:
- Add in salt sugar yeast and 2 tsp butter into maida and combine well. Knead a regular dough by adding little water at a time. Cover the dough and give it a rest of 1 to 1.5 hours.
- Dry roast cumin seeds,saunf and coriander seeds until fragrant. Cool them completely and grind coarsely into mortar pestle.
- Heat 2 teaspoons of oil into non-stick pan. When hot add asafoetida to it. Add previously made coarse powder onions and chillies. Saute for 2-3mins. Now add Chickpeas flour and again saute on low flame for 3-4 mins. Now add red chilli powder, turmeric powder, chat masala, sugar, salt and lemon juice.mix well. Finally add mashed potatoes and coriander. combine well to make stuffing.
- Our dough is ready after resting.
- Slightly knead the dough and make equal 10 portions out of it.
- Roll equal-sized chapatis out of each portion. Thickness of the roti should be medium. Apply melted butter and sprinkle some maida on 1 roti. Please another roti over it. Again apply some butter and sprinkle maida. Please the third roti over it. Repeat the same process and make a stack of all 10 Rotis. Cling film the stack and refrigerate for 20 minutes.
- Take out the stack and roll carefully into a rectangular. Now apply butter over the rectangular roti and sprinkle some maida. Fold the rectangular roti to make a square. Again roll the square roti to make a rectangular sheet. Cut out triangular portions out of the rectangular sheet. You will see fine layers on sides of every triangle.
- On the blunt end (broad base) of triangle put some stuffing. Start rolling from the base to the point. This way make all the croissants.
- Give all the croissants a milk wash. Bake them in a preheated oven at 200°c for 15 mins. Again bake them on180°c for 5-6 mins.
- Serve them with tea.
