The ingredients needed to make Twice baked potatoes:
- 4 baking potatoes
- 2 tbl spoon veg oil
- 4 tbl spoon butter
- 4 tbl spoon sour cream
- 1/2 cup shredded cheese
- Salt, pepper, italian seasonings & garlic powder
Instructions to make Twice baked potatoes:
- Pre heat oven to 400F
- Wash potatoes in cool water. Pat dry & poke holes in potato with a fork, about 6-8 "stabs" per potato will work.
- Brush veg oil (or canola) over potatoes. This will make for a crispy skin & make it easier to hollow the potatoes out. Sprinkle potatoes with salt & pepper.
- Place potatoes on the center rack of the oven & place a cookie sheet under them on a second rack. Bake for 1 hour.
- When done baking, cut a hole in the top of the potatoes, & hollow out the "guts" into a bowl.
- Add butter, sour cream, cheese, salt, pepper, italian seasoning (about 1 tbl spoon) & garlic powder (about 1 tbl spoon) to "guys" & mash like you're making mashed potatoes. You can add more or less filler, & even add green onions & bacon!
- Scoop the mashed potato mixture back into the potatoes & top with cheese.
- Bake an additional 10 minutes to melt the cheese.
