  2. Put sugar, agar and water in the sauce pan and set it on medium fire
  3. Meanwhile start beating egg whites until you get soft peaks
  4. When caramel reaches 117Β°C take it off the heat
  5. Set it aside for half a minute so it'll stop bubbling
  6. Pour it into the egg whites while beating it at high speed
  7. Keep mixing it at high speed until merengue colds down and becomes glossy
  8. Put merengue in the piping bag and pipe it on water circles
  9. Melt chocolate and add cocoa butter (cocoa butter helps to make it more liquidy and glaze)
  10. Glaze them with chocolate and decorate with crushed nuts (optionally)
  11. Let them cool in the fridge and serve :)
