- Preheat oven to 160 degrees Celcius
- Beat together the sugar, oil and eggs
- Stir in grated courgettes (making sure you squeeze out liquid from it). Stir in crushed nuts, lime zest, flour, bs and cinnamon
- Pour the mixture into a lined and greased loaf tin and bake for 1 hour until cooked through. Allow to cool and remove from the tin
- Meanwhile make the icing by gently mixing the cheese with the sifted icing powder and lime zest until just combined. Keep in the fridge for an hour. Then take out and smooth out the icing over your cake. You could decorate with pistachio solvers and lime zest. Slice it up and enjoy!
