  16. 3 garlic cloves, minced
  17. 1/4 cup fresh grated romano cheese
  18. 1/2 cup shredded cheddar cheese
  19. 2 large eggs, lightly beaten
  20. 1 teaspoon worcestershire sauce
  21. 1 teaspoon dijon mustard
  22. 1 tablespoon ketcup
  23. 1 teaspoon italian seasoning
  24. 1 teaspoon hot sauce such as franks brand
  25. 1/2 teaspoon both salt and black pepper
  26. For Serving
  27. Spicy ketcup, marinara sauce and/or cheese sauce for dipping
  28. 1 tablespoon fresh chopped chive
Steps to make Meatloaf Style Meatballs:
  1. Cook potatoes and whole garlic cloves in water or broth until tender, drain well.
  2. Push potatoes and garlic through a ricer into a bowl
  3. Add remaining potato ingredients and combine well, set aside
  4. Make Meatballs
  5. Preheat oven to 375, line a baking sheet with foil
  6. In a small skillet heat butter and add shallot and garlic and cook on low until soft, set aside to cool
  7. In a small bowl combine bread crumbs with cream and let soak while preparing meat
  8. In a large bowl combine ground meat and italian sausage with all remaining ingredients, add cooled shallot and garlic and bread crumbs including any liquid if there is any. Mix with fork or your hands until well combined
  9. Assemble Meatballs
  10. Roll mashed potato mixture into tablespoon full balls
  11. Roll the meat mixture into 2 inch balls
  12. Flatten each meatball into a disk and place a potato ball in the center
  13. Completely enclose potato with meat
  14. Place on prepared baking pan and bake about 30 minutes until meat is cooked throigh
  15. Serve with dipping sauces on the side
