  1. preheat gas grill to 500°F
  2. coat each side of the filets with mustard, set aside
  3. bring wine to a boil and lower the temp. to medium heat, reduce wine to 1 cup
  4. add mushrooms, onions, shallots, black peppercorn and butter to a non reactive pan simmer for 10 minutes
  5. add cream and broth to the pan simmer for 10 minutes
  6. season filets with salt and pepper
  7. add one tablespoon butter to pan and add wine simmer for 15 minutes
  8. apply the filets to the grill, close lid, on high heat for 7 minutes, flip filets grill for an additional 5 minutes. note: medium rare.
  9. set sauce aside for 5 minutes giving time to thicken
  10. place filets in center of plate lightly spoon sauce with mushrooms and onions, garish plate with rosemary & tyme. enjoy!
