- 500 gms Ready to use Dosa batter
- (1 or 2 per Dosa) Eggs as needed
- 100 gms Onion chopped
- 100 gms Tomatoes (deseeded and) chopped
- 1fistful of Fresh Green coriander chopped
- 1-2 Green chilli chopped
- as per taste Salt
- as required MTR Chutney powder to sprinkle (optional)
- as required Ghee or Butter as preferred and needed
Steps to make Sunny- Side-Up Egg Dosa:
- Prepare all the ingredients- chop the veggies. Bring the batter to room temperature if it was in the fridge.
- Mix all the onion, tomatoes etc.chopped with salt as per taste…. when you are about to start making.
- Spread the Dosa batter on a pan, drizzle ghee or butter whatever you prefer.
- Add the egg, I prefer poached / sunny side up so keep it intact then add the onion, tomato, chilli coriander mixture and sprinkle the chutney powder and cover with the lid and cook for a minute or less in low flame till the egg is done, the yolk should be runny so don't overcook it. If you want more crispy Dosa open the lid and cook for sometime. Serve it hot with coconut chutney or any of you favourite chutney.
