  12. Prepare Oven tray with 1/2 large onion and wooden skewer- this is the frame that supports the chicken thighs during cooking
Instructions to make Chicken Gyros:
  1. Make the marinade by combining all ingredients except chicken, onion/skewer.
  2. Add flattened chicken thighs - I used the palm of my hand to gently flatten so that all the pieces were about the same thickness
  3. Marinade for a minimum of 2 -4 hours
  4. Assemble marinated chicken thighs on the skewer - add at right angles to each other to even out the gyros stack.
  5. Bake in oven at 200 degrees centigrade for 1 hour 20 minutes or until cooked through. The outside will get a little burnt but don’t worry - important to check the inside is cooked.
  6. Remove from oven, cool slightly and then slice. Serve with salad and pita bread. A nice side dish is some yoghurt with mint (in winter I substitute a teaspoon of mint sauce from fresh mint).
