Steps to make Sunny Side Up Easy Masala:
  1. Heat oil in a wide skillet. Splutter mustard. Add bay leaf, saute for few seconds to bring out aroma. Add chopped onion. Add a pinch of salt.Saute till golden.Add ginger garlic paste and saute on low heat for a minute.
  2. Meanwhile soak chilli, turmeric and coriander powders in little water. Add this to sauteed mixture. Lower flame and saute till oil separates. Add chopped tomatoes. Sprinkle salt, mix well. Close and cook for two minutes. This will moisten the masala. Now open lid and saute till oil separates. Check  seasoning. Add a pinch of powdered cumin,  mix well.
  3. Now make depressions in the masala and break eggs one at a time, keeping the yolk intact. Sprinkle pepper powder and garam masala, if you are using it. Close skillet and cook on low flame for around 3 minutes. Garnish with chopped coriander/curry leaves/parsely  and serve hot, directly from the skillet at the table.
