- First, boil water with 1 tsp salt and 1 tsp olive oil till it get a rolling boil. Add the pasta and boil till al dante' or just done or till 8 minutes.
- Then remove and rinse in cold water and keep covered. - Then heat a pan, add 1 tablespoon olive oil. Then as it heats up, add garlic, saute' well.
- Then add onions, cook till pink and fragrant. Then add tomatoes and cook well. Add some pasta water and let it cook covered till you get a sauce like consistency.
- Then add mixef herbs and chilli flakes. Add salt and a pinch of sugar. Then add some grated cheese and mix well. Then add pasta, toss well on low heat for 2 minutes. Then remove from flame. Arrange the pasta in a serving plate and sprinkle with extra virgin olive oil, grated cheese and fresh basil. Serve hot with your choice of accompaniment.
- Caprese Insalata: Arrange thick Tomato slices on a platter. Alternatively arrange slices of mozzarella or arrange crumbled bocconcini on top of each slice.
