- Gather ingredients
- Peel and finely chop the garlic & parsley stalks
- Peel & chop the onion & carrot
- Chop up the chorizo & chicken
- Heat some oil in a deep pan. Add all the above, plus the paprika and fry for 5 minutes
- Chop up the peppers and add to the pan, stir for 5 more minutes
- Add the tomato purée, crumbled stock cube & rice. Stir through.
- Add 750ml boiling water, add the lid and simmer for 15 minutes, stirring regularly.
- Add the peas and simmer for 5 more minutes
- Chop up the parsley leaves to garnish and serve
