- 5 large roma tomatoes, chopped
- 2 small cans tomato sauce
- 1 small can tomato paste
- 2 cups chicken broth
- 1 tsp ea, oregano, cumin, paprika, kosher salt
- 1/2 tsp black pepper
- Other ingredients
- Soft boiled eggs
- Chopped cilantro
- Naan bread
Steps to make Brad's goat meatballs:
- Grind the goat and bacon together using the fine plate on your meat grinder. Cover and chill in refrigerator for an hour. If using other meat, proceed to the next step.
- Mix together all of the ingredients for the meatballs. Mix very well. Recover and chill for another half hour
- Form into fairly large meatballs. A bit larger than a golf ball. Place on a broiler pan and bake at 350 degrees for 30 to 40 minutes. You want them to brown well. Flip meatballs halfway through cooking.
- When meatballs go in the oven, add onions and both peppers to a deep frying pan. Add a tbsp of olive oil and sauté until onions start to sweat. Add garlic and tomatoes and sauté until tomatoes let off their moisture. Add rest of sauce ingredients and simmer covered until meatballs are done. Adjust seasoning to taste.
- When meatballs are done, add them to the sauce. Toss to coat and simmer another 5-7 minutes.
- Plate meatballs and sauce. Garnish with cilantro and an egg. Serve with Naan bread that is browned on a griddle. Use it to sop up the sauce. Enjoy.
