The ingredients needed to make Chicken Biriani:
- 1 Kg Whole Capon,cut into 8pieces
- 1/4 Cup vinegar

- 2 knorr curry cubes
- 1 Tbs Whole pilau mix

- 250 ml plain yoghurt
- 1 kg Rice
- 6 cups water
- 1/2 tsp yellow food colour,plus 3 tbs water
- to taste Salt
- On the tomato paste…its 300g..but i used only one tomato paste
Instructions to make Chicken Biriani:
- Prepare your ingredients
- In a deep frying pan add in oil and fry the onions to golden brown.Once golden remove the onions and set aside.
- Add a little bit of the yellow colour on the halved potatoes and fry the potatoes using the same oil to get a good crust from the outside and then set it aside.
- Cut the chicken into 8pieces,pour in the vinegar and set aside
- In a separate pan add in 2tablespoons of vegetable oil(Use the same oil that U fried the onions,its flavourful)Saute' the garlic and ginger for 2 minutes.Partly crush the whole pilau mix add into the pan and let it cook and add the chicken pieces and saute' for 2 minutes or so,then add the knorr cubes.Stir well for flavours to coat the chicken,then add the tomatoes,green peppers,tomato paste and yoghurt.
- Stir to incorporate the flavours and then add the fried potatoes,then sprinkle the fried onions ontop.Let it cook for about 20 minutes…then pour the lime juice,bring to a boil.Cover and let it cook until reduced..about 20-25 minutes on medium heat
- On the other hand,measure 4cups of water and add 2 cups of rice and salt.Cover and let it cook until the rice is almost cooked,sprinkle diluted yellow food colour on the rice and 2 tablespoons of the oil used for frying the onions.Cover with a tight lid on low heat so that the rice can steam and become fluffy. - Serve the rice with the thick stew ontop.
- Alongside kachumbari and pili pili ya kukaanga
- Note:be sure to use 300g tomato paste…
- Yoghurt ni natural
